[Recipe] Raw Collagen Nut Brownies

If there's one thing we've learned from The Fit Brunette (who's taking over our Instagram Story this Saturday, and this is one you WON'T want to miss!), it's that you're more likely to choose a healthy option if it's already prepped for you: "One thing you can do on the weekend to help you stay on track when your schedule picks up is to PREP several healthy snacks... so you have them ready to grab and go during the week!"

If you're anything like us, temptation looms all week long.  And the more stressed I get, the more likely I am to devour something not-so-good for me during the week (like a hand full of M&M's at work because "I deserve it after xyz stressful thing happened!").

And while we're FULLY supportive of Wellness For The Win's most-recent post that everyone is human and making memories is (way) more important than overanalyzing every bite of food, I can promise you I won't look back fondly on myself devouring a bag of Airheads Bites by myself in bed or shoveling M&M's into my face in a corner at work.

So, why not do yourself a favor and PREP these beauties so you have something sweet (but healthy!) ready-to-go, reporting for duty, all week long whenever you feel a craving comin' on (hey, that rhymed!).

  • 1 cup walnuts and pecans

  • 1/2 cup dates (more or less for sweetness preference)

  • 1/4 cup cacao

  • 1/3 cup unsweetened shredded coconut

  • 2-4 scoops Vital Proteins Collagen Powder

Directions: Process nuts, cacao, Vital Proteins, and coconut in a food processor. Add dates and continue to process until a dough forms. Add dough to glass Pyrex to form a "cake" with your fingers. Sprinkle extra nuts on top for crunch! Chill in the fridge until ready to eat. Then cut into bars and enjoy!
