Where my terrible cooks at?
You know, those of us who can't make a G-darn thing without sending up a Google SOS, "how to counteract lemon flavor?" (you add baking soda, btw)
Well, if you're anything like me, I need easy when it comes to baking/cooking. And I mean really easy.
So, as I was looking for recipes for something to keep around the house this weekend, I came across one so fool-proof that even I couldn't screw it up. Well, after I messed up an entire batch of Vital Proteins Collagen Sports Greens Post-Workout Protein Bars, that is (see right). I guess they're not bad if you like lemon, but Extra Virgin Olive Oil (with lemon) is NOT a substitute for Coconut Oil, FYI. And they aren't joking about the lemon part.
Anyway, I'll spare you the boring intro... I hate when people try to make a recipe into a story when it's like just give me the need-to-know, ya know?
So, here it is:
Fool-Proof Collagen Peptide Overnight Oats (adapted from Spinach for Breakfast) - serves 3
2 cups old fashioned rolled oats
2 cups Unsweetened Chocolate Almond Breeze almond milk
2 tablespoons chia seeds
2 tablespoons sugar-free maple syrup
1 teaspoon vanilla extract
Cinnamon to taste
Coconut to taste
Honey to taste
4 scoops of Vital Proteins Collagen Peptides
add all ingredients to a dish and combine
set in the fridge for at least 4 hours or overnight (*pro tip: bottle in nearly-empty peanut butter jars, if available)
serve with fresh fruit or nuts, if desired (I chose almond butter, bananas, frozen blackberries, chia seeds, coconut and raw cacao nibs)
Adapted = we didn't have some of the ingredients, so I had to get creative
To taste = I forgot to measure, so no clue how much is in there
